Singh Meadows: Tempe's Restored 72-Acre Oasis for Organic Markets and Nature Reconnection
On a crisp Saturday morning, farmer Ken Singh chats with a family savoring breakfast at Singh Meadows in north Tempe. In the background, smoke gently rises from a fire pit into the pale blue sky, while steam drifts from a pristine, chemical-free pond.
For 30 years, this 72-acre site operated as Rio Salado Golf Course, meticulously maintained with pesticides, herbicides, and chemicals. Ken Singh has spent years meticulously restoring the land and water, transforming it into Singh Meadows—a welcoming oasis where the community can reconnect with nature.
"There’s a richness that money can’t buy," Singh shares. "That’s why we’re here."
Although farming directly on the land is restricted due to its role as a levee, Singh has created a spacious indoor farmers market offering organic produce, local honey, fresh-baked bread, and other artisanal products.
Most vegetables are grown on his Scottsdale farm, and the honey is harvested from his own bees. Open Fridays through Sundays from 8 a.m. to 2 p.m., visitors can pre-order weekly produce baskets brimming with seasonal delights like Asian pears, golden beets, sweet potatoes, and Medjool dates.
Dining enthusiasts will appreciate the onsite restaurant and juice bar, led by acclaimed chef Sasha Levine—previously of The Ocotillo in Phoenix and now owner of In Betweens, known for its pop-up dinners across the Valley. Serving breakfast and brunch, highlights include smoked salmon tartine with Meyer lemon herbed cream cheese, soft-cooked egg, tomato, capers, and red onion; Indian breakfast tacos with scrambled eggs, flatbread, dal, labne, and cilantro; and a Thai curry bowl with market vegetables, basmati rice, herb salad, toasted coconut, and cashews.
Menus spotlight market-fresh ingredients, such as the rotating Meadows Picnic Basket with toasted Noble Bread, pickled duck eggs, roasted beets, and fennel slices. The Taste of the Meadows elevates fruit salad with assorted fruits over delicate ricotta, topped with pistachios.
Guests can enjoy their meals and locally roasted Press Coffee on the patio or the expansive meadow, furnished with daybeds, picnic tables, and lounge chairs amid rolling green grass.
Singh’s vision is clear: inspire more people to embrace the outdoors. "When you come here and connect with the earth—rolling in the dirt—you’ll leave transformed," he says. "Your demeanor will change."
