Chef Lyle's Smothered Gulf Shrimp and Tasso: Authentic Recipe with Step-by-Step Demo

Ingredients:
- 1 lb Gulf shrimp, peeled and deveined
- 4 oz diced tasso ham
- 1 tsp minced garlic
- 2 oz white wine
- 1 lemon, cut into halves
- ½ quart heavy cream
- ¼ lb unsalted butter
- 1 tbsp blackening seasoning
- Olive oil or shortening
- 1 tbsp chopped herbs (rosemary, thyme, and fresh parsley)
Instructions:
- Heat a medium skillet or cast iron pan over medium-high heat and coat with olive oil or shortening.
- Add tasso and stir for 5 minutes until it starts to crisp.
- Add garlic and continue stirring.
- Season shrimp with blackening seasoning, add to skillet, and stir until shrimp begin to cook.
- Squeeze lemon over shrimp and stir in white wine.
- Once wine has reduced, stir in heavy cream.
- Let cream reduce by half, turn off heat, and slowly stir in butter.
- Season with chopped herbs and serve immediately.
