Foodie Friday: Master Café Amalfi s Signature Wagyu Brisket Recipe

Wagyu Brisket

Ingredients:
3 lb Wagyu beef brisket
3 Tbsp fresh thyme
3 Tbsp kosher salt
1.5 Tbsp ground black pepper
1 large yellow onion, roughly chopped
½ celery head, roughly chopped
2 carrots, roughly chopped
2.5 cups red wine
4 cups beef broth
4 Tbsp neutral oil

Combine thyme, salt, and pepper; rub generously over the brisket.

In a hot heavy-bottomed pan, heat oil and sear brisket on all sides. Add mirepoix (onion, celery, carrots) and cook 2-3 minutes more. Deglaze with red wine, reducing by nearly all. Add broth until brisket is ¾ covered; simmer.

Preheat oven to 350°F. Cover with foil and bake 1 hour. Uncover, baste with juices, re-cover, and bake another 1.5 hours.

Slice and serve hot, or cool and refrigerate for later.
