Yellowfin Vodka Introduces Oaked Otoro: Exclusive Toasted and Charred Editions
Jamison Trouth, owner and master distiller at Yellowfin Vodka, has launched exciting new limited-edition products just in time for summer. The standout innovation is Oaked Otoro, exclusively available at the distillery in Sulphur, Louisiana. This premium vodka is crafted by resting the original Yellowfin Otoro with American oak staves, offered in two versions: "toasted" and "charred." Unlike traditional aged rum or bourbon, Oaked Otoro is aged in stainless steel barrels using oak staves. This method prevents oxidation, accelerates the process, and ensures no additives—unlike many bourbons or rums that may include sugar or caramel.

Nestled in a modest beige metal building at 1716 East Burton Street in north Sulphur, Yellowfin Vodka distillery produces some of the region's finest vodkas with unique natural flavors. I recently visited Jamison at the storefront—my first since the 2017 opening. The retail area features various vodkas, Yellowfin-inspired artwork, and custom sipping glasses. Through interior windows, glimpse the distilling equipment while Jamison answers questions knowledgeably. Hearing about his new releases, I had to learn more.

Jamison addresses a common misconception about sugar in distillation:
Curious about "toasting" vodka? No kitchen appliances involved! Jamison uses oak staves—smaller versions of whiskey barrel slats—from the same premium suppliers. These toasted or charred staves are submerged directly in the spirit. With endless combinations available, the toasted version yields a light golden hue, while charred delivers deep amber—both evoking bourbon-like flavors. Limited batches of each are available now at the storefront, ideal for personal enjoyment or Father's Day gifting.

Otoro, Geaux Pokes & Mardi Gras Vodka (Limited Editions):
Jamison's lineup includes a second, more neutral vodka perfect for dry cocktails like vodka waters, sodas, and dirty martinis—unlike the characterful original. This new release is co-branded as Geaux Pokes Vodka with McNeese State University, supporting the school through sales. The original sipping vodka is now Yellowfin Otoro Single Estate Vodka (named for tuna's premium cut). Annual Mardi Gras editions feature festive labeling on Otoro. Jamison's Background:
A chemical engineer by training, Jamison's distillation class at McNeese sparked his venture. Inspired during his senior year, he crafted vodka from Louisiana cane sugar—sourcing locally to honor the state's producers and streamline production. After years engineering, he launched Yellowfin full-time. His engineering mindset drives efficiency, innovation, and uncompromising quality.

Gulf Breeze: 2 oz Yellowfin, 2 oz pineapple juice, 3 oz cranberry juice
Louisiana Lemonade: 2 oz Yellowfin, 5 oz lemonade, ¾ oz sweet tea
Cajun Cosmo: 1.5 oz Yellowfin, 1.5 oz cranberry juice, ½ oz triple sec, ¼ oz lemon or lime juice (Shake with ice, strain into martini glass)
Yellowfin Mint Crisp: 2 oz Yellowfin, ½ oz lime juice, 1 mint leaf, club soda (Shake with ice, double strain into flute, top with club soda)
