When the cooking show Flip My Food, which transforms classic dishes into healthier versions, visited Creole Nature Trail Adventure Point in October, they created this irresistible Spicy Sausage & Crawfish Spaghetti Casserole. Bursting with spicy sausage, tender crawfish tails, melted cheese, and bold flavors, it's inspired by the interactive Cajun kitchen exhibit at Adventure Point, where you can smell sautéed onions, garlic, butter, and peppers. Crawfish fans and traditionalists alike will love this hearty dish.

#EatSWLA: Authentic Spicy Sausage & Crawfish Spaghetti Casserole Recipe

Ingredients:

  • 1/2 lb. spaghetti
  • 3 tablespoons olive oil
  • 1 small onion, diced
  • 1/2 medium green bell pepper, diced
  • 1 jalapeño pepper, seeded and minced
  • 1 tablespoon fresh garlic, minced
  • 1/2 pound ground beef
  • 1 lb. spicy sausage
  • 3/4 lb. crawfish tails, whole and cleaned
  • 1/2 cup black olives, sliced
  • 1 (16 oz.) jar spaghetti sauce
  • Kosher salt, to taste
  • Ground black pepper, to taste
  • 1 tablespoon dried oregano
  • 1 cup reduced-fat sour cream
  • 3 green onions, chopped
  • 1 1/2 cups Monterey Jack cheese, grated
  • 1 1/2 cups smoked cheddar cheese, grated
  1. Cook spaghetti according to package directions; drain and set aside.
  2. In a large Dutch oven or cast iron skillet over medium-high heat, add olive oil, onion, bell pepper, jalapeño, and garlic. Sauté until caramelized. Add ground beef, sausage, and crawfish tails. Cook until beef is no longer pink, breaking it into crumbles, about 8-10 minutes.
  3. Drain excess fat. Stir in spaghetti sauce, black olives, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer uncovered for 20 minutes, stirring occasionally. Stir in cooked spaghetti, sour cream, and green onions. Sprinkle cheeses on top.
  4. Bake at 350°F for 10 minutes or until cheese is melted and bubbly. Let rest slightly before serving.
