Ingredients:
½ cup béchamel
¼ cup heavy cream
2 tsp truffle peelings
1 ½ cup cheese blend (see recipe) plus extra for gratin
1 ½ cup blanched orecchiette pasta
½ tsp truffle oil
¼ tsp salt
¼ tsp black pepper
Cheese Blend Ingredients:
¾ cup grated white cheddar
¼ cup smoked gouda
¼ cup grated parmesan
¼ cup grated gruyere
Directions:
- Heat sauté pan on medium flame.
- Add béchamel, truffle peelings, and cream; stir until incorporated. Let the mixture reduce slightly.
- Add 1 ½ cup cheese blend, stir until cheese is completely melted.
- Add pasta and truffle oil. Mix completely and season with salt and pepper.
- Spoon mac and cheese into a serving bowl.
- Top with reserved cheese blend and place in salamander (or under a broiler) until cheese is melted and golden brown.
