Refresh Your Summer Finale: Grapefruit Collins Cocktail Recipe

In addition to letting us in on her go-to list of Brooklyn cocktail spots, Alex Farrington, the spirit and wine director at Mouth, shared a recipe inspired by the Grapefruit Collins she was served at Grand Army Bar in Cobble Hill, Brooklyn.

At Grand Army you can order the Bosses' Cabinet, which is a daily rotation of the bartender's favorite drink that day. Right after they opened, I rolled the dice and this is what I got. It's a variation of a gin fizz, with lots of grapefruit and a heavy float of bitters. It's super refreshing on a hot summers' day.

GRAPEFRUIT COLLINS

Serves one

INGREDIENTS

1.5 oz. New York Distilling Company Perry's Tot Gin
2 oz. fresh grapefruit juice
.5 oz. simple syrup (substitute jam for added depth of flavor)
.5 oz. lemon juice
2 oz. club soda
several dashes Hella Bitter Aromatic Bitters
1 small wedge of lemon for garnish (optional)

PREPARATION

Combine gin, grapefruit juice, lemon, and simple syrup in a shaker with lots of ice. Shake until very cold and strain into a tall glass filled with ice. Top with club soda and garnish with lemon wedge.
