Behind the Scenes: Chef Jeff Henderson of Flip My Food Crafts Cajun Classics at Creole Nature Trail Adventure Point
It was an exhilarating experience meeting Chef Jeff Henderson and the Flip My Food crew when their food truck rolled into the parking lot at Creole Nature Trail Adventure Point. The professional entourage—including hair stylists, makeup artists, sous chefs, producers, directors, gaffers, and videographers—arrived fully equipped for production.
They swiftly set up in our bayou exhibit, adjusting lighting to create the perfect cook station for Chef Jeff and our guests.

I assisted Chef Jeff in preparing a healthier take on the Cajun staple, red beans and rice. He incorporated turkey tasso from a local grocer for authentic smoked flavor with a heart-healthy twist over traditional beef or pork. A pro tip I learned: using chicken broth instead of water in jasmine rice elevates its flavor profile.

Local food icon Eric Cormier, former Lake Charles American Press food editor, teamed up with Chef Jeff on butternut squash with deconstructed boudin—an innovative dish for Southwest Louisiana. Eric shared insights on Cajun versus Creole cuisine, complementing our exhibit on Louisiana's culinary styles at Creole Nature Trail Adventure Point.

*Side Note: Eric Cormier co-created the Southwest Louisiana Boudin Trail, drawing visitors to authentic mom-and-pop shops and meat markets.
Capt. Sammie Faulk, renowned local charter fishing guide, helped prepare crawfish spaghetti. He highlighted our fresh Gulf seafood and Cajun music heritage—his father was a member of the legendary Hackberry Ramblers.

Shelley Johnson, executive director of the Lake Charles/Southwest Louisiana Convention & Visitors Bureau, provided Chef Jeff with a tour of the bureau's newest Creole Nature Trail attraction, Creole Nature Trail Adventure Point.

Flip My Food filmed multiple episodes across Lake Charles/Southwest Louisiana, including L’Auberge Casino Resort, USS Orleck, Lake Charles Memorial Hospital, First Federal Bank, Crave, and Big Easy Foods. Visit www.flipmyfood.com for recipes and episode air dates.
