It was an exhilarating experience meeting Chef Jeff Henderson and the Flip My Food crew when their food truck rolled into the parking lot at Creole Nature Trail Adventure Point. The professional entourage—including hair stylists, makeup artists, sous chefs, producers, directors, gaffers, and videographers—arrived fully equipped for production.

They swiftly set up in our bayou exhibit, adjusting lighting to create the perfect cook station for Chef Jeff and our guests.

I assisted Chef Jeff in preparing a healthier take on the Cajun staple, red beans and rice. He incorporated turkey tasso from a local grocer for authentic smoked flavor with a heart-healthy twist over traditional beef or pork. A pro tip I learned: using chicken broth instead of water in jasmine rice elevates its flavor profile.

Capt. Sammie Faulk, renowned local charter fishing guide, helped prepare crawfish spaghetti. He highlighted our fresh Gulf seafood and Cajun music heritage—his father was a member of the legendary Hackberry Ramblers.
