Easy Skillet Apple Cobbler with Store-Bought Pie Crust
Nothing beats fresh fruit desserts in summer, especially apple pie. But homemade pie crust can be intimidating with its rules on butter vs. shortening, pastry cutters, and precise timing. Enter this genius skillet apple cobbler from Flip My Food—it uses refrigerated pie crust that you simply tear into pieces. No rolling, no perfect edges required!

Ingredients:
- 2 pounds fresh Granny Smith apples, cored, peeled, and cut into wedges
- 3 tablespoons unsalted butter
- 3 tablespoons dark brown sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground allspice
- ¼ teaspoon freshly ground nutmeg
- Pinch of salt
- 1 tablespoon fresh lemon juice
- 1 tablespoon cornstarch
- 2 refrigerated pie crusts
- 2 tablespoons granulated sugar
- Preheat oven to 350°F.
- In a large cast iron skillet over medium heat, combine apples, butter, brown sugar, cinnamon, allspice, nutmeg, salt, lemon juice, and cornstarch. Cook until apples are caramelized and softened, about 10-15 minutes.
- Roll out pie crusts with a rolling pin and tear or slice into squares. Arrange pieces over the apple mixture and sprinkle with granulated sugar.
- Bake for 35-40 minutes until crust is golden brown. Cool on a wire rack for 30 minutes. Serve warm with vanilla ice cream.
