Experience the World-Famous Mardi Gras Gumbo Cook-Off in Lake Charles
Thanks to the global popularity of Cajun cuisine, Louisiana cooking has earned worldwide acclaim. As a devoted fan, I believed I knew it all—until I attended the annual World Famous Cajun Extravaganza and Gumbo Cook-Off in Lake Charles during Mardi Gras in Southwest Louisiana.
This event far surpasses typical BBQ or chili cook-offs. Over 50 krewes and competing teams packed the Lake Charles Civic Center, spilling outdoors along the lakefront promenade. The atmosphere buzzes with energy as teams vie for the “spirit stick” through lively, raucous celebrations.

The aroma of simmering roux whets appetites, building anticipation for tasting. Teams wait for judges to sample first before serving generous portions in brim-full Styrofoam bowls.

I sampled as many as possible—over 20 half-bowls—across categories: traditional chicken and andouille sausage, seafood, and wild game. Standouts included exotic options like pheasant, elk sausage, alligator, rabbit, and even squirrel.
