In late 2016, internationally trained chef Amanda Cusey sought an executive chef role in the Lake Area. Simultaneously, Mike Sperandeo prepared to launch his new restaurant, The Villa, needing an exceptional culinary leader. Their paths converged perfectly—a serendipitous match.

Amanda's childhood took her across the U.S. before her family settled in Ireland. She launched her food service career, honing skills at the esteemed Tante Marie Culinary Academy in England (Le Cordon Bleu affiliate). From British pubs and an Irish-American diner to authentic Italian kitchens in Dublin, her journey led her back to the U.S. When her parents relocated to Lake Charles, Louisiana, Amanda followed. She soon assumed leadership at The Villa. Despite her global transitions, she describes Southwest Louisiana as "a culture shock."

With a strong foundation in French cuisine, transitioning to Louisiana flavors was seamless. At The Villa, Amanda upholds traditional Italian techniques while innovating with fusion elements. Signature creations include Dirty Risotto and Turtle Tortellini, featuring local Gulf shrimp, seafood, and crawfish. "That's quintessentially Louisiana," she notes. "Crawfish isn't common everywhere."

Amanda's style blends traditional Italian and French influences with Southern flair. "My French training shapes my techniques," she explains. "Italian immersion followed, creating a fusion. Living in Louisiana, I incorporate local zest."
