Oysters offer more than exceptional flavor—raw, steamed, roasted, or fried. As a keystone species, they create reef habitats supporting diverse fish and plant life. Each oyster filters 50-60 gallons of water daily, enhancing water quality.
North Carolina's shellfish industry generates $27 million annually, employing 532 residents. Over half this value stems from farmed oysters, available year-round. Both wild-caught and farmed varieties deliver premium taste and quality.

Launched in 2020 by experts including North Carolina Sea Grant, North Carolina Coastal Federation, NC Shellfish Growers Association, and dedicated volunteers, the NC Oyster Trail showcases unique tourism experiences. Highlights include oyster farm tours, restaurants and markets featuring NC oysters, shell artists, and educational sites like aquariums and museums dedicated to this vital mollusk.

In the Outer Banks, featured farms include Cape Hatteras Oyster Company, Slash Creek Oysters, and Sticky Bottom Oysters on Hatteras Island; Savage Inlet Oysters south of Nags Head; and Ocracoke Mariculture on Ocracoke Island. Some offer boat tours, while others supply local restaurants and direct sales.

Local NC Oyster Trail restaurants include Blue Water Grill & Raw Bar in Manteo; The Froggy Dog Restaurant & Pub in Avon; and on Ocracoke Island: Flying Melon Café, Howard’s Pub & Raw Bar, Plum Pointe Kitchen, and Ocracoke Oyster Company. These spots serve creative oyster dishes daily using both wild-caught and farmed options. Travelers between Hatteras and Ocracoke Village can choose the express passenger ferry or car ferry. Supporting organizations include the Dare County Arts Council, featuring artists inspired by oysters and marine themes; Outer Banks Adventures for airboat tours of oyster beds and reefs; North Carolina Coastal Federation's Wanchese demonstration site for oyster farming and living shorelines, with coastal care tips; and Hatteras Island Ocean Center for oyster exhibits, kayaking, and coastal programs.
