As the Florida heat yields to crisp autumn breezes, STK Orlando—Disney Springs’ upscale steakhouse—has unveiled a fresh lineup of seasonal dishes. The modern venue, renowned for its premium steaks, now showcases Florida‑sourced ingredients that celebrate the flavors of fall.
Executive Chef James O’Donnell has curated five standout items that capture the essence of the season. These dishes are crafted with local produce, seafood, and a touch of Mediterranean flair.
Burrata Starter
Indulge in a generous serving of creamy burrata, paired with heirloom tomatoes, arugula pesto, and Kalamata‑olive croutons—a simple yet sophisticated opening to the meal.
Seared Sea Scallops
Chef O’Donnell elevates scallops with a buttery sear, complemented by short‑rib jam, barley risotto, and a finish of red‑wine sauce, creating a harmonious surf‑and‑turf experience.
Florida Grouper
The grilled grouper is topped with black mussels, chorizo, and aged sherry vinegar, offering a flavorful transition from summer to fall for seafood aficionados.
Spiced‑Rubbed Rack of Lamb
Enjoy a Mediterranean‑spiced rack of lamb, accompanied by sweet‑potato puree, shaved apple, and date chutney—an indulgent centerpiece that balances sweet and savory.
Apple Crumb Cake
Finish your dining experience with STK’s apple crumb cake, served alongside dulce de leche ice cream and caramel sauce, a generous dessert perfect for sharing.
Disney Springs offers more fall delights beyond STK. Visit Amorette’s Patisserie, Sprinkles Cupcakes, D‑Luxe Burger, or try Morimoto Asia’s new Dim Sum Brunch. Later this year, Paddlefish will open with a contemporary aesthetic and a menu featuring seafood, steaks, and chops. Planet Hollywood will return in December with a fresh observatory‑themed design and a menu crafted in part by celebrity chef Guy Fieri.
