Across town at Porter Alehouse and Gastropub, Chef Lyle Broussard from L'Auberge Casino Resort's Jack Daniel's Bar & Grill sold out his Crispy Redfish with Citrus Slaw. (Redfish is a local favorite, fresh from the Calcasieu River, caught by Louisiana fishermen.) The pickled onions added a perfect tangy relish—I'm a big fan, and the quick sell-out proves other guests were too.

I couldn't resist ordering three portions of the Cracklin' Crusted Shrimp with Abita Rootbeer Gastrique and Charred White Corn Grits appetizer (generously shared with guests, of course).

It was a thrilling evening introducing Austin to Lake Charles' freshest seafood.
