Fresh Flavors and New Energy: Chef Ryan Trahan Revives Blue Dog Café in Lake Charles

Chef Ryan Trahan, a native of Eunice, brings extensive experience and a passion for local ingredients to the Blue Dog kitchen. Crowned the 2018 King of Louisiana Seafood, he's thrilled to partner with the Rodrigue family.

"Blue Dog is a cherished tradition and landmark. I'm excited to help preserve and enhance the restaurant while honoring George Rodrigue's legacy," Trahan shares. "It's an honor to embark on this journey with the family."
The refreshed menu features appetizers like pork fat-fried catfish, deviled eggs, pork belly cracklins, and marinated crab claws. Entrees such as crawfish enchiladas, blackened redfish, and the fried Gulf seafood platter promise to delight.

"We're introducing a few exciting new dishes soon, including pan-seared grouper that I believe will become a Blue Dog signature," Trahan adds. "I can't wait for guests to try it."
"Guests are embracing our fresh take on modern Cajun cuisine," says Jacques Rodrigue, co-owner and son of artist George Rodrigue. "Some longtime favorites have evolved, but the focus on high-quality, local, never-frozen ingredients wins them over. We're delighted with the positive response."

Visit the bar for signature cocktails crafted by Trahan and the team. "Like our dining menu, our drinks highlight fresh, local ingredients," Rodrigue notes.
The café recently hosted a sold-out wine tasting, with more events planned. "We're organizing additional wine tastings and wine-paired multi-course meals," Rodrigue says. "Our highlight is the Zydeco Lunch Series every Saturday from 11 a.m. to 2 p.m., featuring local Zydeco bands." See upcoming events.

George Rodrigue was a cultural ambassador for Louisiana, and the family is committed to carrying forward his legacy. "We hope guests leave with a deeper appreciation for George as an artist and the richness of Cajun culture," Rodrigue says.
