A local entrepreneur, Pettefer ignited his barbecue passion seven years ago, grilling racks of ribs in his backyard and hosting friends for casual feasts. Word spread quickly, leading to catering gigs for small events, then larger ones. This momentum prompted him to invest in a spacious food truck and smoker. Paul's Rib Shack Barbecue debuted triumphantly at the 2017 Live at the Lakefront music festival in Lake Charles.

What sets Paul's Rib Shack apart? Their commitment to authentic, live-wood fire cooking—the traditional method that captivates with its aroma. Pit master Sam Turner explains, "People get hungry just from the smoke; it's wired into our primal instincts." They source premium ingredients: top-grade meats, four exceptional French cheeses for their signature macaroni and cheese, house-made rubs from high-end spices, and pre-trimmed cuts for mess-free enjoyment. Pettefer emphasizes quality over cost for an unrivaled product.
Limited by food truck space, the menu focuses on stars like best-selling brisket, in-demand beef ribs, pork ribs, pulled pork, and a standout smoked turkey. They're innovating with Louisiana twists—bread pudding, red beans and rice, smoked gumbo—blending local flavors with Texas-style barbecue. Alligator is next on the horizon, hints Pettefer.

At the 2018 Arts and Crabs Festival, Pettefer co-won Best Crab Dish with his inventive Crab and Rib Mac Bites, showcasing his bold culinary creativity—even if it's not a menu staple.
At the Smoke and Barrel Festival
Paul's Rib Shack will shine at the inaugural Smoke and Barrel festival, celebrating bourbon, BBQ, and whiskey. Join on Nov. 10, 1:00 p.m. – 5:00 p.m. at the Historic Calcasieu Parish Courthouse lawn, 1000 Ryan St., Lake Charles.
New Brick-and-Mortar Location
Pettefer parks his iconic red food truck at 4800 Nelson Rd., site of his latest venture. He's renovating the property for a vibrant, welcoming restaurant, set to open in the coming months.
